At Tsukitori, we meticulously select our ingredients and cooking methods to bring out the natural deliciousness of chicken. Our pride and joy, the 'Hinadori suage,’ uses only domestically sourced chickens aged around 60 days under specific conditions. Unlike typical fried chicken, we fry the chicken slowly to seal in the tenderness of the meat while capturing the authentic flavor of Hinadori (young chicken). 月鳥では、80年の歴史を持つ日本橋人形町の老舗問屋「鳥安」から、生の国産鶏肉を毎朝仕入れています。ひな鳥素揚げには契約農場で育てられた生後60日前後のひな鳥のみを使用。素材選びからこだわり抜くことで、柔らかく、味わい深い一品へと仕上げています。その他、新鮮さが命のレバーやハツといった内臓系の部位についても、経験豊富なスタッフが仕入れ直後にひとつひとつ丁寧に串打ちを行っています。
At Tsukidori, we source raw domestic chicken meat every morning from Tori Yasu, a long-established wholesaler in Nihonbashi Ningyocho with an 80-year history. For our hinadori suage (deep-fried young chicken), we only use young chickens raised in contract farms in Kyoto, aged around 60 days. By paying attention to every detail from ingredient selection, we aim to create a tender and flavorful dish. Additionally, for organ parts such as liver and heart, which freshness is crucial, our experienced staff meticulously handle each part immediately after procurement.
月鳥のひな鳥素揚げは、半身を解体せずに揚げるのが特徴。衣を一切使わず、高温・低温・常温でじっくり揚げることで皮はパリッと、もも肉はジューシーに、むね肉はしっとりと仕上げています。
One of the distinctive features of Tsukidori’s hinadori suage (deep-fried young chicken) is that it is fried without dismantling the whole bird. Without using any batter, the skin is crispy, the thigh meat is juicy, and the breast meat is moist, thanks to slow frying at high, low, and medium temperatures.
油は揚げ物の要。フライヤーで鶏肉以外を揚げないため油に雑味が混じることなく、鶏肉の脂が油に溶け込みおいしさが増します。また、フライヤーを毎晩清掃し常に新鮮な油を使用しています。
Cooking oil is crucial for frying. By only frying chicken in the fryer, without mixing other flavors, the chicken fat blends into the oil without any off-flavors, enhancing the deliciousness. Additionally, we clean the fryer every night and always use fresh oil.
